What is Kombucha?
Kombucha is essentially Sweet Tea fermented by symbiotic culture of acetic acid bacteria (Gluconobacter, Acetobacter species), lactic acid bacteria (Lactobacillus, Lactococcus species) and yeasts (Saccharomycodes ludwiga, Zygosaccharomyces bailii etc.)

home of Happy Tiger Ferments is located on top of the Barton Springs section of the Edwards Aquifer in Austin, Tx. The fresh spring water is pumped up from beneath the property and passed through a 5 stage filtration process. It is then used to cold brew organic yerba mate that is then sweetened with organic evaporated cane juice. Next the living S.C.O.B.Y. (symbiotic culture of bacteria and yeasts) or Mother culture is introduced to the sweet tea and allowed to ferment in small batch (5 gallon) glass vessels.
